Korean Fried Chicken - How to cook (Sweet, sour, spicy, Jong-won Baek, 백종원 레시피)

Today, I will let you know the Korean fried chicken recipe introduced by Jong-won Beak, a famous dining expert in Korea.

 

Jong-won Baek is a very famous person in the dining industry such as Gordon Ramsay in Korea, and he often appears on Korean TV programs and Youtube for letting everybody know his recipes.

 

Let's start making Korean Fried Chicken and Yangyeom Chicken following a Jong-won Beak's recipe.

 

Ingredients are as follows. (for 2-3 servings)

 

 

Ingredients

 

 

  • Cooking oil
  • Pepper powder
  • Seasoned salt (Or Chicken powder)
  • Milk
  • Frying powder
  • Korean Soy sauce
  • Red pepper powder (Fine Type)
  • Brown Sugar
  • Crushed Garlic
  • Starch Syrup (Or high fructose corn syrup, honey)
  • Ketchup
  • Korean hot pepper paste (Gochujang)

 

 

 

Step 1.

 

 

Removing the inner parts in running water

 

 

Remove the inner parts of a chicken and wash it in running water.

 

Since there are many internal organs on the back of the chicken, you should dig it out with your fingers and remove it carefully.  Also, because a chicken has a lot of foreign substances, cleaning is very important, so make sure to wash it.

Seasoning

Add 1g of pepper powder (1/3 tablespoons) and 5g of chicken powder (1/2 tablespoons). And mix well with chicken.

 

If you use a large chicken, you need to season more than this.

 

Step 3.

 

Leave chicken mixed with seasoning for a few hours. If you're using a large chicken, you can leave it for about half a day.

 

 

 

Step 4. 

 

 

Marinating

 

 

Pour 190g (1 cup) of milk and marinate for about 20 minutes.

 

Many people say milk is effective in removing the nasty smell of a chicken, but it really doesn't have a big effect. So if you're in a hurry, you can move on to the next step after pouring the milk.

 

 

Step 5.

 

 

Making dough

 

 

Add the frying powder 120g (1 cup) and mix them well. Make sure the dough is thick

 

Step 6.

Place 1 cup of frying powder (120g) in a disposable bag and place the kneaded chicken in it. And shake and mix: Air in it and mix it better.

 

The amount of frying powder should be adjusted according to the size of the chicken and the type of frying powder.

Pour cooking oil(1.8L) in a pan. Turn on the stove and preheat it to 170 degrees(in Celcius). To check the oil temperature, add a thick dough in the oil and check if the dough comes up 'after 3 seconds'.

 

If the dough rises in a second, the oil is overheated. If it is overheated, you should control the temperature down because the chicken can't be cooked on the inside.

 

Step 8.

 

 

Frying chicken

 

 

Add the kneaded chicken to the preheated oil and fry for about 7 minutes at a time. If the chicken is a big size, it should be fried a little longer. When fried in a deep frying pan and the chicken rises above the pan, it's quite ripe.

Sieve the chicken and drain the remaining oil from chicken well. And we're going to wait until the oil temperature gets back up, and pick up everything that's floating in the oil.

 

It is because while waiting for the temperature to rise, the color of the things that float on the oil change, and they fry making the oil taste bad.

 

Once the temperature has risen again, put a fried chicken in a pan once again and fry for another 1~2 minutes.

 

Sieve the chicken out again, drain the oil, and put it on a plate. Then making fried chicken is done.

 

If you want fried chicken without sauce, you can have it as it is. But if you want Korean Yangnyeom Chicken, follow the next steps.

Put 35g of Korean soy sauce (3.5 tablespoons), 15g of fine red pepper powder (3 tablespoons), 50g of brown sugar (1/3 cups), 65g of ground garlic (1/2 cups), 220g of starch syrup (4/5 cups), 75g of ketchup (1/3 cups) and 45g (1/4 cups) of red pepper paste (Gochujang) in a pot and mix well.

 

Gochujang and soy sauce should be used in Korean to make them taste good. And red pepper powder is more recommended to use fine one than thick.

 

Step 11.

 

 

Boiling the spicy sauce

 

 

Turn on the stove and boil the sauce. Stir once when it starts to boil and turn off the stove.

 

If you boil too much time, the sauce hardens.

 

Step 12.

 

 

Mixing fried chicken with sauce

 

 

Mix fried chicken with sauce according to taste. And if you have peanuts, sunflower seeds, or almonds, stir-fry, cool and mash them. Then mix them in seasoned fried chicken(Yangnyeom Chicken), or sprinkle them on top.
